A home that smells of baking is the best kind of home. If there is one thing in the culinary realm I feel like I can work on it is my baking skills. Cooking I’m fine with since I can afford to deviate from strict measurements. Baking not so much. A recipe book in my hands is a standing joke in this house, I tend to set it up, look at it for a minute and then I usually end up doing whatever I think works. This recipe I’m about to share has withstood all of my deviations.

It was a Sunday and we were craving something sweet. I was too lazy to drive to the grocery store to shop for any ingredients. So I started looking for a recipe that I could pull off with only two extra large eggs, no icing sugar and a limited amount of cocoa as restrictions.  Then I struck gold, a recipe that was a piece of cake (Yes, all puns intended!). I found a One Bowl Chocolate Cake Recipe on Rose Bakes. I made some alterations to the recipe according to what we had and I halved the recipe since we don’t have two pans that are the same size and our butts can’t handle that level of indulgence. I used an eclair chocolate glaze recipe that we got in school from our Hospitality Studies teacher Mrs. Bauer, bless her heart. It turned out great, the Instagram pics were a hit and we couldn’t get enough of it, so I decided to bake it again and share it with you.

 Ingredients

The Cake

(Rose Bakes recipe left | My adaptation right)

2 cups white sugar | 1 cup

1¾ cups all-purpose flour | ¾ cup and a bit

¾ cup unsweetened cocoa powder | ½ cup

1 ½ teaspoons baking powder | ¾ teaspoon

1 ½ teaspoons baking soda | ¾ teaspoon

1 teaspoon salt | ½ teaspoon

2 jumbo eggs | 2 extra large eggs

1 cup milk | ½ cup

½ cup vegetable oil | ¼ cup

2 teaspoons vanilla extract | 1 teaspoon

1 cup of boiling water | ½ cup of boiling coffee

Notes: I halved the recipe in my own, um, way as you can see. I didn’t have any jumbo eggs so instead I decided to just use 2 extra large eggs.

The Glaze

(Juf. Bauer)

45ml butter

45ml golden syrup

30ml cocoa

45ml sugar

5ml coffee/mocha essence

salt to taste

Method | The Cake

1. Preheat the oven to 180 ℃ or 160℃ Thermo fan ( I did end up on both occasions turning the Thermo fan on 180℃ for an extra 10 minutes). Prepare two 20cm pans with non-stick spray or butter, if you intend to make the full recipe or one 20cm if you choose to halve the recipe like I did. I used a silicone ring pan.

2. In a large mixing bowl, mix together the sugar, flour, cocoa, baking powder, baking soda, and salt.

3. Make a well in the center of the dry ingredients and add the eggs, oil, milk and vanilla. Beat for two minutes at medium speed, then stir in the boiling coffee.

4. Pour into the prepared pan/pans and bake for 35 minutes, or until a tester comes out clean. Allow it to cool for at least 10 minutes in the pan and then flip it out onto a wire rack and let it cool completely before frosting.

METHOD | THE GLAZE

1. Add the ingredients in order of the list into a small pot over low heat.

2. Heat up the mixture and keep stirring until the mixture is warm, well mixed, thick and smooth. Don’t allow the mixture to boil.

3. Remove the mixture from the stovetop and sprinkle 15ml cold water over the mixture.

4. Just before using mix in the water until the mixture is smooth.

5. Pour over the cake and decorate to your heart’s desire.

Not only is this really a no fail cake, it is delicious and not overbearingly sweet. I can’t wait to try different ways of icing this cake since we’ve bought some icing sugar in the meantime.
